Mr. Cupping Restaurant-Café

What happened to the location in Zone 1, where our Strutz Art Café was originally operating until we moved it into the compound of Strutz Art Garden Resort? Rod, a young entrepreneur has opened there a café-restaurant that is serving a local food speciality: pinikpikan with smoked etag. For those that are not from the Cordillera region or not familiar with it, I am citing here a search result from Google:
"Pinikpikan with smoked etag is a traditional Filipino dish from the Cordillera region featuring a soup made with chicken and smoked, cured pork called etag. The cooking process involves charring the chicken's skin over fire to give it a smoky flavor, and then simmering it with etag and local vegetables until tender. The smoked etag provides a distinct smoky and salty flavor to the broth."
And what is smoked etag? Again a search result here:
"Smoked etag refers to a traditional, preserved pork from the Cordillera region of the Philippines that is salted, dried, and then smoked. This method of food preservation is an important part of the local culture and is often used in celebrations and ceremonies. The pork can be sun-dried, smoked for several weeks or months, or both."
Some of our family, staff and friends recently enjoyed some of the dishes in Mr Cupping. Rod was there to give us a warm welcome. It is very delicious, no wonder that food enthusiast come even from far to enjoy pinikpikan with smoked etag. The location also serves espressos, cappuccinos, smoothies and many other refreshing drinks. It is good to see that it draws a crowd and we recommend our hotel guests to go to Mr. Cupping (it is 5 min by tricycle away) and to try this very local food... that is when they have tried out our very own Strutz Art Café in the hotel... hehe.
